A local delicacy cultivated in underground caves for over a century, the button mushroom or Champignon de Paris is a specialty of the area of Saumur. At the "Saut au Loup", you can visit the rooms where mushrooms are still cultivated and sample stuffed mushrooms for lunch on the terrace overlooking the Loire
A round little bread served straight from the oven, the Fouées are topped with local produce such as creamed mushrooms, rillauds, mongettes (white beans), fresh cheese and jams. They are so good that a war was fought over them in Rabelais's life of the giant Gargantua. Several troglodyte restaurants serve them with local wine.
Installed in a cliff cave dwelling, Troglo Tap, home of "pommes tapées", revives a 19th century tradition almost extinct. After a tour of the facility, you can sample this tasty specialty, good to the eye and the palate.
